Breakfast Recipes

My Bowl of Oatmeal for 1

1      cup of water.
1/2   cup of gluten free rolled oats.
1/3   cup of frozen blueberries.
small handful of walnut pieces.

Cook the water and oats per the instructions on the box.
Put the frozen blueberries on the bottom of your bowl.
Pour the cooked oatmeal on top of the blueberries.
Sprinkle the walnuts on top of the oatmeal.
Let it sit for just a minute before eating so that the blueberries will thaw.
Dig in!


The Family Green Smoothie - serves 4

Put into our Vitamix (you will probably need a high speed blender for this to be smooth):

2-3 cups of greens (ours is usually a mix of spinach & kale)
1 banana
5 frozen strawberries
1/4 cup frozen mango
approx. 1/2 cup orange juice
approx. 1 cup water

Blend on high speed until smooth.
Divide it into glasses and serve.
My kids will only drink this if they have a straw :)
